A croquembouche, it’s a tower made of profiteroles, filled with crème patissiere and cream, and then dipped in caramelized sugar, which once set, is what gives the cake its name that means “crunch in the mouth”: a crunchy outer shell that once bitten will reveal a fabulous velvety creamy centre.
We must admit that we are a bit biased towards croquembouche profiteroles. It’s really hard to resist the tentation of eating them all! Instead, we hand dip in hot (very hot!) caramelized sugar every single one and then we patiently proceed to building the tower, as tall as you like it (well, within a certain limit of course!).
It’s stunning. It’s delicious. It’s a sure show stopper.
